This Junmai is brewed with the classic kimoto method and aged at least two years. Omachi rice is grown in the brewery’s own fields without pesticides or chemical fertilizer. Longer aging and traditional craftsmanship create a complex, soft structure with a refreshing character. A sake that appeals to both traditional and modern palates. Winner of the 2024 Japan Kan Sake Award (“Premium ATSUKAN”) and the Kura Master Moto Classique Platinum Prize.

This sake leaves you with a soft mouthfeel from its creamy texture with a mild bitter-sweet note, lively acidity, and a fine dry finish.

The Kimoto method provides full umami and flavor depth that becomes even more pronounced at warmer temperatures.

Recommended pairing: Thanks to its mature, nutty, lightly creamy profile, this sake pairs well with roasted nuts, fried fish, grilled meats (e.g., yakitori), and umami-rich dishes like mushroom risotto, grilled vegetables, caponata, or grilled côte de bœuf.

Serving temperature: Best served chilled (10–15 °C) to bring out fresh accents and subtle mint notes, or warm (40–50 °C) for fuller umami and a round, creamy texture.

Izumibashi Sake Brewery, founded in 1857 during the Edo period, is located in Ebina (Kanagawa), in the fertile alluvial plains along the Sagami River. This location provides not only ideal conditions for rice cultivation but also access to mineral-rich ground water from the Tanzawa Mountains. Since 2016, Izumibashi has been known as a “cultivation brewery®,” this means that every step—from growing and polishing the sake rice to brewing—is carried out in-house.
