The Watarai Honten brewery is located in the city of Tsuruoka, Yamagata, with a history spanning over 400 years. The brewery makes extensive use of the traditional Kimoto method. Watarai Honten has won consecutive accolades at the "Wine Glass Delicious Sake Awards." They also manage the most impressive sake museum we have ever visited, showcasing over four centuries of brewing history. The current tōji (master brewer) of Watarai Honten is Watarai Toshihito, the 18th generation of the Watarai family. He is deeply involved in the traditional brewing processes that have been passed down through centuries, and also integrates modern techniques to enhance the quality and appeal of their sake.
