We source our udon from Fukumoto Seimen, a small noodle maker in Kyoto with over 100 years of craftsmanship. The shokunin use carefully selected local ingredients such as Kyoto’s wheat variety Setokirara.

At their factory, 80 year old machines are still used to slowly stretch the dough, before each batch is finished by hand using techniques passed down through generations. This creates udon with a smooth texture and perfectly chewy bite, where every strand is slightly unique.
