Shio Saba literally means salted mackerel. Its appeal lies in both its simplicity and its flavor.

The mackerel is only wet-salted. This draws out moisture, concentrates the flavor, and extends the shelf life. No heavy marinades—just pure fish.

Mackerel is naturally rich and flavorful. By using only salt, that full character is perfectly balanced—the fat melts during grilling, giving a rich, savory taste without feeling heavy.

Shioyaki (grilling with salt) is one of the most classic Japanese cooking methods, and shio saba is perhaps its most famous example. It is often served with a bowl of rice, some grated daikon, and a wedge of lemon.
