Saba Mirinboshi is a traditional Japanese preparation in which mackerel is marinated in a mixture of mirin and soy sauce and then slowly dried. Before packaging, we sprinkle some sesame seeds on top.
The marinade gives the fish a subtle sweetness and rich umami, and because the mackerel is dried, the flavor becomes concentrated with a firm, full bite. When grilled, the mirin caramelizes, creating a deliciously savory-sweet crust. This is a very popular izakaya snack, though it is also often enjoyed as a breakfast dish.

Preparation method: Defrost the fish in the sealed package for 30 min in cold water or overnight in the refrigerator. Preheat the oven or grill to 230° C. Place the fish skin side up on a baking sheet and bake for 8-10 minutes.
