Iwashi Mirinboshi
Dried sardines with soy sauce and mirin│195 grams, 4 fillets
Mirinboshi is a Japanese method of preserving and flavoring fish. The fish, sardine in this case, is marinated in a mixture of mirin (sweet rice wine), soy sauce, and sake. After that, the fish is dried.
The result: a sardine with a lightly sweet, savory taste and a firm, concentrated texture. Mirinboshi is often briefly grilled before eating, which brings out the umami and the subtle caramel flavor of the mirin even more. Perfect as an 'otsumami' snack.
