Misozuke literally means “marinated in miso.” It is a Japanese technique where fish, meat, or vegetables are marinated in miso (fermented soybean paste) for a period of time.

The miso adds depth, umami, and a subtle sweetness, while drawing out moisture from the product and giving it a firmer, more concentrated texture.

Our black cod is caught in the cold waters of Alaska and, contrary to what its name might suggest, is not related to cod. This exclusive fish is renowned worldwide for its buttery-soft texture and rich, full flavor. Japanese people love it. Black cod—known in Japan as “gindara”—is naturally very fatty, making it ideal for grilling or slow cooking. In Japanese cuisine, it is considered a true delicacy, often marinated in miso, and adored by both chefs and home cooks.

Preparation method: Defrost the fish in the sealed package for 30 min in cold water or overnight in the refrigerator. Preheat the oven or grill to 230° C. Place the fish skin side up on a baking sheet and bake for 8-10 minutes.
