This Junmai is defined by the fukuro shibori bag-pressing method. With three stages of rice addition (san-dan-jikomi) Gohyakumangoku, Kame no O, and Yume no Ka it develops balanced depth and a soft texture. The orange label signals an approachable entry into the Tenmei world, with refreshing light sweetness and subtle citrus nuances.

Tasting notes: A subtle and fresh aroma of orange with a light floral hint. A soft, smooth sake with gentle acidity. The finish is long and well balanced.

Recommended pairing: Grilled salmon, salads with fresh citrus notes, pasta carbonara, pumpkin soup. This sake is very versatile.

Serving temperature: Briefly chilled (10-15 °C) to highlight fresh acidities as well as the aromatics present. Heat briefly up to 35 °C will bring out the umami and soft tones within the sake.

Akebono Shuzo, founded in 1904, is a highly respected sake brewery located in the Aizu region of Fukushima Prefecture. The brewery is situated in the Aizubange area, renowned for its extreme seasonal temperature shifts and pristine natural surroundings. This environment provides ideal conditions for sake production, especially for Akebono’s Tenmei series. The current owner, Kouichi Suzuki, is a fourth-generation brewer—and the first man to lead the brewery. Before him, his mother, grandmother, and great-grandmother all served as heads of the brewery.
