This luxurious Daiginjo from Tenmei Gold Label is crafted by Akebono Shuzo with Yume no Kaori rice from Aizu Sakashita, polished to 37% for exceptional purity. All kōji is made in a medium box, and the sake undergoes a short maturation in a small-scale process. Yeast Utsukushima F701 combined with a house selected strain delivers a complex, refined aroma with a silky finish.

Recommended pairing: Daiginjo is a more delicate style of sake, making it an ideal partner for sashimi and white fish. Avoid pairing with very bold dishes outspoken in flavour. Try steamed scallops or crab, creamy soups, dishes with leeks, or roasted chicken.

Akebono Shuzo, founded in 1904, is a highly respected sake brewery located in the Aizu region of Fukushima Prefecture. The brewery is situated in the Aizubange area, renowned for its extreme seasonal temperature shifts and pristine natural surroundings. This environment provides ideal conditions for sake production, especially for Akebono’s Tenmei series. The current owner, Kouichi Suzuki, is a fourth-generation brewer—and the first man to lead the brewery. Before him, his mother, grandmother, and great-grandmother all served as heads of the brewery.
