Recommended pairing: Dishes with lightly sweet components and plenty of umami pair perfectly with this sake. Raw fish in all its forms (sashimi, crudo, ceviche), light dishes such as salads with goat cheese, Caesar salad, or shakshuka. Grilled lobster or pasta alle vongole.
Serving temperature: Chilled (around 8–10 °C), allowing the fresh and lightly sweet characteristics to fully come through.
Located over 700 meters above sea level in the Kiso Valley, Nakazen Shuzo combines centuries-old craftsmanship with modern techniques. The soft mountain water, drawn from a horizontal spring, and the cold winters in Nagano create ideal conditions for sake production. The brewery cultivates its own rice, ensuring that every step—from seed to bottle—remains under their care. The result is an authentic, regionally rooted flavor that reflects the very essence of Nagano.
