Morita Shoube is a sake brewery located in Shichinohe, Aomori Prefecture, founded in 1777. The company was established by a traveling merchant and originally started as a general goods wholesaler. Morita Shoube places great importance on using local rice varieties such as Hanaomoi and Hanafubuki. The brewing process balances tradition with scientific precision. The brewer uses instruments to analyze acidity and amino acid levels during fermentation, helping determine the perfect moment to press the sake. The stunning illustrations, including those on their Komaizumi "Maguro" (tuna) bottle, were created by Nebuta master Takenami Hiro, one of the most renowned Nebuta artists in the region. These labels reflect the deep connection to the local area and, in particular, to the region’s fishing culture.
