A lively sake with a Muscat-like aroma thanks to the addition of elderflower, while a subtle hoppy touch adds extra fruitiness. The combination of yellow and white kōji creates a pleasant sweet-and-tart profile, rounded by a gentle kick of Japanese sanshō pepper. Refreshing and layered—great as a festive aperitif or alongside light dishes.

Tasting notes: Muscat-like aroma with a gentle sweet-sour balance from the koji, enhanced by a subtle spicy hint of sansho, finishing fresh and fruity.

Recommended pairing: Excellent as the first drink at a party, but also suitable with light, fresh dishes, salads, or sushi. Thanks its acidity and umami, this sake will be familiar to white wine drinkers.

Serving temperature: Ideally around 8–10 °C, to provide a clear and aromatic experience.

Haccoba is on a mission to "liberate" sake, drawing inspiration from the old doburoku tradition, when families brewed sake at home without licenses. They combine these primitive brewing methods with the free-spirited culture of craft beer—for example, by adding hops during fermentation (the Hanamoto method from Tohoku). In doing so, they blur genre boundaries and create a new, incomparable flavourful experience that stays true to the ancient roots of sake while embracing modern experimentation.
