Kazunoko is an exclusive Japanese delicacy and is regarded as a symbol of fertility, many children, and a flourishing family. That is why this golden herring roe is traditionally served during the Japanese New Year (Oshōgatsu). Its unique, crunchy texture and subtly briny flavor make kazunoko a special treat, beloved with sushi and sake.

Before use, some of the salt needs to be removed. Rinse the kazunoko briefly under running water and then place the roe overnight in the refrigerator in a solution of 1 liter of water with 4 teaspoons (20 grams) of salt. After that, the product is ready to use—enjoy it plain, or incorporated into salads, or as a topping for sushi or sashimi.
