Teriyaki sauce is one of the best-known sauces in Japanese cuisine.
The word teriyaki refers to the glossy (teri) coating that appears when meat, fish, or vegetables are brushed with the sauce and grilled (yaki). The sauce is a blend of soy sauce, mirin, sake, and sugar, creating the perfect balance of sweet, salty, and umami flavors.

In Japan, teriyaki is often used for grilled chicken, fish such as salmon or mackerel, and even tofu or vegetables. While cooking, the sauce lightly caramelizes, giving the dish its signature shine and rich, deep flavour.

Founded in 1890 in Kitakyushu, Fukuoka Prefecture, Mitsuwa Soy Sauce has been brewing authentic soy sauce for more than 130 years. The brewery is located along the historic Nagasaki Kaidō, also known as the "Sugar Road"—the route that carried imported sugar across Kyushu during the Edo period and helped shape the region's love of sweeter flavors. This history has had a lasting influence on the region's culinary culture, and to this day, people in Kyushu continue to prefer soy sauce with a slightly sweeter taste.
