Izumibashi Limited Dragonfly is a seasonal release within the well-known “Dragonfly” line. Izumibashi is renowned for a fully integrated approach from their own rice fields to bottling. Limited Dragonfly versions often feature small variations in rice, yeast, or maturation, yielding unique, highly expressive sakes with pronounced floral aromas, a finer texture, and a playful interplay of acidity and umami.

Recommended pairing: Creamy pastas (e.g., carbonara) or Japanese dishes with a richer mouthfeel (like tonkatsu). Grilled tuna steaks, ossobuco, or Sichuan food.
Serving temperature: Best served chilled (10–15 °C) for a bright, fruity delicacy, or slightly warmed (30–35 °C) to reveal deeper umami and a rounder mouthfeel.
Izumibashi Sake Brewery, founded in 1857 during the Edo period, is located in Ebina (Kanagawa), in the fertile alluvial plains along the Sagami River. This location provides not only ideal conditions for rice cultivation but also access to mineral-rich ground water from the Tanzawa Mountains. Since 2016, Izumibashi has been known as a “cultivation brewery®,” this means that every step—from growing and polishing the sake rice to brewing—is carried out in-house.
