Mentaiko Butter Baguette

Ingredients

  • 200 g unsalted butter (softened)
  • 30 g mentaiko (1 piece)
  • 1 tsp lemon juice
  • 1 baguette
  • Optional: chopped chives or lemon zest

This recipe is one of our favorite ways to enjoy mentaiko. Mix the roe with butter and spread it on a warm baguette. Add a little lemon zest on top and it’s ready to serve.

Simple, bold and seriously delicious.

Preparation

  1. Preheat the oven to 200°C.
  2. Cut open the mentaiko and scrape out the roe with a spoon.
  3. Beat the softened butter in a bowl until smooth, then mix in the mentaiko and lemon juice.
  4. Spread on sliced baguette and bake 8–10 minutes until golden.
  5. Optional: finish with chopped chives or lemon zest.
