Mentaiko Butter Baguette

This recipe is one of our favorite ways to enjoy mentaiko. Mix the roe with butter and spread it on a warm baguette. Add a little lemon zest on top and it’s ready to serve.
Simple, bold and seriously delicious.
Preparation
- Preheat the oven to 200°C.
- Cut open the mentaiko and scrape out the roe with a spoon.
- Beat the softened butter in a bowl until smooth, then mix in the mentaiko and lemon juice.
- Spread on sliced baguette and bake 8–10 minutes until golden.
- Optional: finish with chopped chives or lemon zest.
