- Bring the mirin to a boil in a small saucepan. Let it boil for about 10 seconds to evaporate the alcohol. Then let it cool completely.
- In a bowl, mix all the ingredients (except the garnish). Cover the bowl and let it marinate in the fridge for 15 minutes.
- Arrange the grated daikon, shiso leaves, and shiso cress on two plates. Place the marinated horse mackerel sashimi on top.
