Hokkai at Home: Black cod with eggplant

With these products it is very easy to quickly prepare a healthy and delicious meal. Moreover, the flavors bring me straight back to Japan; my favorite holiday destination. After a long day at the university, I made Gindara Saikyozuke for my roommate and myself. Other than that I kept it simple with some eggplant, spring onion and rice. It was superb!’

Ingredients

  • Gindara Saikyozuke (black cod in sweet miso sauce)
  • 200 grams of white rice
  • 1 eggplant
  • 2 spring onions
  • 3 spoons of soy sauce
  • 2 spoons of mirin

Preparation

  1. Defrost the cod for 30 minutes in the package in cold water.
  2. Preheat the oven at 230 ℃.
  3. Cook the rice according the instructions on the package.
  4. Cut the eggplant into blocks and chop the spring onion.
  5. Mix the soy sauce with the mirin.
  6. Put the fish on a baking tray covered with a sheet of baking paper and put in the oven for ca. 7 minutes.
  7. Bake the eggplant and the spring onion and add the soy sauce and mirin mixture at the end.
  8. Take the fish out of the oven and serve with the rice and vegetables.
