Chef’s Recipe: Foil baked salmon in sweet miso

Ingredients

  • Sake Saikyozuke (defrosted)
  • Aluminum foil
  • 15 gr sliced onions
  • 10 gr sliced oyster mushroom
  • 10 gr paprika cut in stripes
  • 1 asparagus
  • 15 gr cauliflower rosettes
  • 5 gr chopped spring onions
  • Knob of butter

Preparation

  1. Take a piece of aluminum foil and stack all the ingredients on top of each other. Start with the onions, then the fish, and then add the rest of the vegetables (except for the spring onions). Place the butter on top.
  2. Close the foil firmly on all sides. Place a pan over medium-low heat and place the package in the pan. Bake for ca. 10 minutes
  3. Carefully open the foil and sprinkle the spring opnions on top.
