Tataki is a famous Japanese-style preparation of various types of fish and meat. This skipjack is quickly seared on the outside, whilst still remaining beautifully raw on the inside. If you thaw the Katsuo tataki at home and cut it into nice thin slices, there is a wonderful contrast in both taste and appearance between the charred outside and the silky, deep-red inside. This is incredibly delicious with a topping of soy sauce (from Hokkai!), spring onion and ginger.

★Defrost Katsuo

With sashimi it is important that defrosting takes a short time. This way you prevent condensation and the colour stays at its most beautiful. If defrosted in the refrigerator or at room temperature, over time the fish may discolour or develop an unpleasant smell. It is better to defrost sashimi by placing it in cold water, in the unopened package. Place a ziplock bag around the packaging first, to ensure that no water gets in.

This beautiful Iwashi (sardine) is from Chosi, Japan. It is a fatty fish high in Omega 3 and vitamin D. We already have some products in our range where we have salted or marinated the Iwashi. With this Iwashi, however, you can do that all by yourself! In Japan, the entrails of the Iwashi are often eaten with it, but this can be a bitter and difficult taste. In this video, our filleting expert Dave explains how to clean the Iwashi yourself!

Note: make sure you thaw the Iwashi before you start working with it.

We advise you to heat Iwashi.

Kazunoko (herring roe)

Kazunoko is an exclusive Japanese delicacy. In Japan, the herring roe is a symbol of many children and a thriving family. The delicacy is mainly eaten with New Year.

This product is traditionally pickled in salt, partly to increase its shelf life. You must remove (part of) the salt yourself before the product is suitable for consumption. Remove the kazunoko from the packaging and rinse under the tap. Now place the kazunoko in a solution consisting of 1 liter of water and 4 teaspoons (= 20 grams) of salt, and let it stand overnight in the refrigerator.
